Ingredients

Scale
  • 4 1/2 cups watermelon, cubed
  • 2 cups vanilla yogurt
  • 1/4 cup heavy cream
  • Juice from 1/2 lemon
  • 1 tablespoon coconut sugar
  • 1 teaspoon vanilla extract

Instructions

  1.  Place the cubed watermelon on a parchment paper lined sheet tray. Leave spaces between the cubes so that they are easy to remove later.
  2. Place the tray in the freezer for at least 6 hours, or overnight. 
  3. Once the watermelon is frozen solid, remove the tray from the freezer.
  4. Place half of the watermelon cubes in the food processor. Blend for ten seconds.
  5. Add the remaining watermelon cubes to the food processor. Blend for ten seconds.
  6. Add the yogurt, heavy cream, lemon juice, sugar, and vanilla. 
  7. Blend the mixture for one minute, or until it is a smooth consistency.
  8. Place the mixture into a freezer-safe bowl.  
  9. Freeze for one hour, or until the frozen yogurt is indeed frozen.  

Notes

  • Freeze the fruit on a parchment paper lined sheet tray – This will ensure that the fruit does not stick together in a huge block, which makes it easier to blend. 
  • Chill the container before adding the fruit yogurt mixture – This will help keep the mixture cold from the beginning and it will freeze faster. 
  • Allow the fro yo to sit at room temperature for a few minutes before scooping – This will make the frozen yogurt easier to scoop.
