Cobb Salad

  • 2 pounds boneless skinless chicken thighs
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 teaspoons brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried basil
  • 1 teaspoon garlic salt
  • 2 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 7 cups of romaine lettuce, roughly chopped
  • 4 hardboiled eggs, halved
  • 6 slices of cooked turkey bacon, diced
  • 1 avocado, sliced
  • 2 tomatoes, diced
  • 1/3 cup red onion, diced
  • 1/2 cup blue cheese crumbles

Balsamic Vinaigrette

  • 1/4 cup Balsamic vinegar
  • 1/4 cup olive oil
  • 1 teaspoon brown sugar
  • 1 tablespoon spicy brown mustard
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

Cobb Salad

  1. Preheat the oven to 425 degrees.
  2. In a large bowl, season the chicken with balsamic vinegar, olive oil, brown sugar, smoked paprika, basil, garlic salt, kosher salt, and black pepper.
  3. On a foil-lined sheet tray, roast the chicken for 20-25 minutes. Remove it from the oven and let it rest for 10 minutes.
  4. Add the greens to a large bowl. Top with chicken, eggs, bacon, avocado, tomatoes, onion, cheese, and balsamic vinaigrette (see recipe below).

Balsamic Vinaigrette

  1. In a ziploc bag, add balsamic vinegar, olive oil, brown sugar, mustard, basil, garlic salt, kosher salt, and black pepper. Shake for 15 seconds or until combined.
